It was apple week at William's school this week. Yummy! They studied Johnny Appleseed, of course, and I don't know how many apple trees have been planted in our back yard, since then. This must be a universal kid thing. I remember planting apples, watermelon, peaches... whatever seeds from fruit we ate.... trees in our backyard when I was little. Why don't those things ever grow??? That backyard should be chock full of fruit trees by now. William also insisted on taking a present to his teacher. We used this Apple/Pumpkin wallet by Pickle Pie designs . So CUTE! and then I monogrammed it with the Isabella Fancy Frame by Digistitches. I reduced the size quite a bit to get it to fit on the apple- but it still stitched out perfectly. I, also, made some mini apple pies for William's class, but only managed to taste one of the bunch... and it was so HOT when I ate it, I didn't even know if it was good. I've made them again, since... and I can tell you... without a doubt- They are good!!! Very good. And so quick. You have to make these! This recipe makes 12. Okay, get these ingredients: 2 refrigerated pie crusts- I used the Wal-Mart brand- they taste yummy. 5-6 medium apples (I used 2 golden delicious and 4 Granny Smith) white sugar Spices- you can use all cinnamon- if that's what you have- or a combination of cinnamon, cloves, all spice and nutmeg- that's how I made them the second time- yum. yum. butter- which I forgot both times and they tasted fine... but I'm going to remember next time splash of lemon juice pinch of salt flour egg or milk Okay... Preheat oven to 425 degrees Get a muffin tin- spray with Pam- no need to flour Cut up your apples. Just put on the Glee Britney episode, sit in front of the t.v., peel, cut with one of those cool apple corer things , then cut those slices into chunks. Try not to eat too many- but you can eat the skin... yum. Give the whole cores to the kids- they will plant them in the backyard, giving you time to watch Glee.... :) Toss the apples with 3/4 cup sugar, 2 tsp. cinnamon (or 1.5 tsp. cinnamon, 1/8 tsp. cloves, 1/8 tsp. all spice, 1/4 tsp nutmeg) 6 tbs. flour, a pinch of salt and a bit of lemon juice- not too much Just taste one to see if it's good- YES! it's good. Yes. Even with the flour on them- don't believe me? Try it. Report back. Try to keep little hands out of the pie filling Roll out your dough a little- if you don't- you won't have enough Cut the dough into about 5 inch circles to place in your muffin tins (I used that silver milkshake cup) Place the circles in the muffin tins- it helps to have little helper hands to do this. They love it. Save all the leftover dough- you need every bit of it. Get your pie filling Hopefully you have some left after the little hands have been sneaking Spoon heaping amounts of that pie filling into the muffin cups Then- if you please- cut little tabs of real butter and place on top of the pie filling. I forgot this part both times I made these... and they tasted fine... but think of how much yummier they would be with butter. YUM. So add if you like. Roll out the rest of the dough and cut smaller circles I used that wine glass- which incidentally has NEVER been used for wine. Let the little ones place the circles on top and pinch the sides together- do not give them a fork.... they won't know how to work it and you'll end up with fork holes all over your pies.... Brush a little milk or egg wash on to make them pretty and also to help the sugar stick to the top I use this kind, cause it's really pretty and BIG and because I have it. If you don't have, don't buy it- just use regular sugar or nothing. Still yummy. Cut little X's on the top- for the pies to vent. "Plus, that's what Snow White does to her pies"- Ella. Bake at 425 degrees for 16-18 mins or until the tops are brown. Scoop them out of the pan and let them cool. yum. yum. yum. Now... go get the leftover pie filling to bake in ramekins and have cinnamon apples.... oh....wait... the kids already ate all of them. What, Mom? They're yummy! Enjoy! Let me know if you make them!
